Spirulina lemon soda with mint
Zesty, tart, and bright green. The perfect lemonade for warm days on the balcony. Freshly harvested spirulina has a mild taste and almost disappears behind the lemon and mint; only the color remains.

Ingredients
- 2 tsp freshly harvested spirulina
- 2 organic lemons
- 2 tbsp honey or agave syrup
- 500 ml sparkling water, well chilled
- Ice cubes
- a few fresh mint leaves
Instructions
- Juice the lemons, setting aside one slice for garnish.
- Stir the spirulina with the lemon juice and honey in a glass until smooth.
- Divide the ice cubes and mint between two glasses.
- Add the spirulina mixture and top off with sparkling water.
- Stir briefly and enjoy immediately.
Tip
Add a little fresh ginger for more heat. Always stir fresh spirulina with a little liquid first so it distributes without clumping. Best enjoyed immediately.
